3 One-Pot Meals for Easy Camper Cooking

Nobody is keen on doing dishes in general, but on holiday in a campervan, it is even more of a pain. Here are a few delicious one-pot recipes to save you a big, long cleanup after dinner. Skip the hassle with these recipes–there are so many other much more exciting things you want to be doing!

Baked eggs, veggies and beans

Easy and quick, so you can get out and see some more exciting stuff than your pots and pans.

What you need:

  • 1 Garlic clove, chopped
  • Half an onion, chopped
  • Vegetables (as much as you like), chopped
  • 1 can of baked beans (Cannelini beans are best for this dish)
  • 3 to 4 eggs, whisked with a little dash of milk
  • Grated cheese
  • 2 slices of toast or sourdough bread

How it works:

Fry up your chopped onions, garlic and vegetables in a pan. I prefer broccoli, corn and pepper, but the sky’s the limit (or rather, the size of the pan).
The more vegetables, the more filling this meal gets. You like meat? Cut up some chicken breast or beef to go in with the veggies.

Take 3 to 4 eggs and whisk them with a dash of milk until smooth.
Spread out your veggies evenly in the pan and cover them with the egg mixture. Lower your heat and let the egg fry up slowly.

Once the egg starts to cook on the top, spread your cheese over it and let it melt. Add a couple of slices of toast to it, et voila…delicious eggs, veggies and beans are done!

Nachos

It’s not the typical camping food I admit, but they’re so simple that you have to give it a go.

What you need:

  • Minced meat, 250g (or more if you are extremely hungry or you have a big pan)
  • 1 onion, chopped
  • 1 clove of garlic, chopped
  • 1 can of Kidney or baked beans in hot sauce
  • 1 can of corn
  • 1 carrot, chopped
  • 1 pepper, chopped
  • 1 bag of nachos
  • Grated cheese

How it works:

Again, all you need is a pan.

Heat up some oil and fry up your mince until it is brown and crispy.
Add chopped onions, garlic, carrot and pepper.
Add your corn and last, but not least, the beans with the hot sauce.

Once everything is cooked and hot, spread out some nachos on a plate and pour the mince sauce over the top. As we all know, everything tastes better with cheese, so sprinkle some (or a lot) over the top.

Stir Fry

Nothing goes over a good old stir fry when it comes to last minute one-pot meals.

What you need:

  • 1 onion, chopped
  • 1 garlic clove, chopped
  • Mixed vegetables, chopped (or mixed bag out of the freezer – Suggestion: broccoli, carrot, zucchini, leek, pepper)
  • 1 package stir-fry noodles (to be steamed)
  • Any type of meat, chicken or tofu, cut into strips
  • Soy sauce and a bit of ginger (fresh or already crushed)

How it works:

Same old, same old…all you need is a pan.

Fry up garlic and onion in a bit of oil.
Add your meat or tofu and then the veggies. Then throw in some soy sauce (to your taste) and a bit of ginger.
Let everything cook for a bit.

Be careful not to overcook it; you don’t want those veggies to be soft and sloppy. Add some stir-fry noodles which should be ready in no time. Lastly, add some salt and pepper and serve it up.
